Cooking Demo with Dietitian Gillian McConnell  

We are delighted to partner with Dietitian Gillian McConnell of InsideOut Nutrition.

Gillian has 14 years of experience giving dietary advice to people with IBD and she will be sharing her tips during our Live cooking demo on Wednesday the 20th of May at 1pm.

Ingredient / Shopping list 

Stuffed Peppers 

Serves 4 

Peppers, capsicum, red, 4x medium pepper

Spring onions, raw  4x average

Tomato puree 1x tablespoon

Garlic powder  2x teaspoon

Tomatoes, chopped, canned 400g 1x can

Beef, mince, raw, extra lean 500g 5x Small -(Substituted Quorn Mince here if vegetarian/ vegan) 

Oregano, dried,  1x teaspoon

Cheddar cheese, grated 120g 

Salt 1x average pinch of salt

Black Pepper, 1x average sprinkle

Rice, brown, wholegrain, raw 100g 

Oil, rapeseed 1x tablespoon

Parsley, 1x Average Portion

 Beetroot and Chickpea Burgers

Serves 6

Oil, olive 1x tablespoon

Spring onions, finely chopped 40g 4x average

Garlic powder  1x teaspoon

Beetroot, cooked 140g 4x 1/2 small beetroot

Oat flakes, rolled 100g 10x tablespoon

Chickpeas,  1x average can (drained)

Tahini paste 54g 3x tablespoon

Salt 0.5g 1x average pinch of salt

Pepper, black 0.1g 1x average sprinkle

Cucumber and Avocado Salad 

Serves 4

Cucumber, raw, flesh and skin, cubed 300g 2x 1/4 average cucumber

Avocado, average, flesh only, cubed 280g 2x average

Onions, red, raw, chopped 118g 1x small onion

Garlic puree 8g 1x teaspoon

Lemon juice, fresh 20g 1x Juice from 1/2 lemon

Lime juice, fresh 15g 1x tablespoon

Salt 0.5g 1x average pinch of salt

Pepper, black 0.1g 1x average sprinkle
